This will be the 2nd last post about Christmas cookies. I’m so close to the end of them that I can almost taste it!
After the epic failure of the sugar-free shortbread, I tried a couple of other low sugar and sugar-free recipes.
The first one was sugar-free chocolate cookie recipe, made with jam. Unfortunately I had a hard time finding sugar-free jam for some strange reason, and ended up using a “no sugar added” jam instead. Not ideal, but not bad for a diabetic.
Sugar-Free Chocolate and Jam Cookies
Adapted from Sugar Free Recipes
(1.5 cup) 350g (12oz) plain flour
(0.5 cup) 100g (3.5oz) cocoa
(1 cup) 250g (9oz) soft margarine
One tsp baking soda
A pinch of salt
Five tbsps sugar-free strawberry jam
Preheat your oven to 180 deg C/350 deg F/gas mark four. Take four tbsps of sugar-free strawberry jam and cream in a large bowl with your margarine, until light and fluffy. Beat your eggs and stir into your margarine and sugar free jam. Sieve your plain flour and baking soda, and stir in until you have a good chocolaty dough. Dust a surface with flour and roll your dough out. Using a circular cookie cutter, cut into round shapes. Place on a greased baking sheet and position in the centre of your oven. Bake for about 15 minutes.
At this point is when I took the photo. The cookie had the texture of a dense cake, but did not taste sweet enough. To add some additional sweetness, I made the cookies into thumbprint cookies (pushing my thumb into the middle of each warm cookie to make a shallow indentation), and used the remainder of the jam to fill the depressions. Letting the whole cookie cool, the jam also jelled a bit so it wasn’t runny.
This cookie wasn’t bad tasting, but I ended up having to add a lot more jam that I had originally planned. It defeated my purpose of having as little sugar in a cookie as possible.
Low-Sugar Molasses Cookies
The next cookie I made was a low-sugar molasses cookie. The molasses taste was way too strong. I probably should have tried to make a low-sugar ginger cookie instead.
Also, I forget which recipe I used. I’ve checked all my records, and I can’t find it. I suspect I deleted it out of frustration! So instead you only get a photo. Sorry.
